Blue Lake Ranch Southwest Scramble

We grow a variety of potatoes at Blue Lake Ranch, and the purple Peruvian potatoes which are very purple are always a fun surprise.  Because we are in southwestern Colorado in the 4-Corners area, green chilies are a must!

½ cup fresh cilantro, chives or diced red bell pepper

10 eggs

6-8 potatoes—red, yellow, white or purple

1 can cream of mushroom soup

Green chilies to taste

2 cups grated sharp cheddar cheese

Instructions: Dice peeled potatoes to bite size pieces; mix with mushroom soup and green chilies.  Season with salt and pepper.  Microwave approximately 6-7 minutes in the serving dish. While potatoes are cooking, scramble the eggs with salt and pepper.  Pour over the potatoes; mix well and sprinkle with cheese and bake at 350° until cheese is melted.  Sprinkle with garnish and serve.

Prep time:  20 minutes     Servings:  6-8
