Blue Lake Ranch Pinon Nut Pancakes

Blue Lake Ranch is surrounded by beautiful old pinon trees, which produce a bounty of nuts in the fall. They add a distinct and delicious southwest flavor and texture to pancakes.

  • any pancake mix (follow instructions for 10 people)
  • 1 cup (or two!) pinon (or pignolia) nuts
  • ONLY real maple syrup please!

Instructions: Mix batter per instructions package. Add pinon nuts and fold in. Cook and serve.

Blue Lake Ranch Quick Scrambled Eggs

When you’re in a hurry and haven’t prepared something the day ahead, this quick and easy egg dish pleases just about everyone’s palate.

  • 1 dozen (plus) eggs
  • 1 package Boursin cheese
  • 1 cup (plus) mild fresh salsa
  • salt and pepper
  • fresh cilantro and chives for garnish

Instructions: Lightly sauté fresh salsa; add beaten eggs and scramble eggs until nearly firm. Add cheese and into the eggs until it melts; mix well. Sprinkle with garnish and serve.

Blue Lake Ranch Southwest Scramble

We grow a variety of potatoes at Blue Lake Ranch, and the purple Peruvian potatoes, which are very purple, are always a fun surprise. And around here green chilies are a must!

  • ½ cup fresh cilantro, chives or diced red bell pepper
  • 10 eggs
  • 6-8 potatoes red, yellow, white or purple
  • 1 can cream of mushroom soup
  • green chilies to taste
  • 2 cups grated sharp cheddar cheese

Instructions: Dice peeled potatoes to bite size pieces; mix with mushroom soup and green chilies. Season with salt and pepper. Microwave approximately 6-7 minutes in the serving dish. While potatoes are cooking, scramble the eggs with salt and pepper. Pour over the potatoes; mix well and sprinkle with cheese and bake at 350° until cheese is melted. Sprinkle with garnish and serve.
